Green Asparagus
Originally from the Mediterranean, its origin is placed near the Tigris and Euphrates rivers where Egyptians and Greeks already ate this vegetable. However, it was in Roman times when its consumption became popular, because of its excellent organoleptic qualities as well as its therapeutic properties. These are also the reasons for its introduction into Spain. It is known by its scientific name "Asparagus officinalis”. Green asparagus grows in direct sunlight; therefore chlorophyll develops and provides this variety its natural green colour. This type of asparagus is highly appreciated for its flavour and therapeutic properties. At an organoleptic level, they are slim and have a straight stalk, the colour of which has tones of greens, browns and bronzes. It possesses an intense bitter-sweet flavour, a profound aroma and a firm meaty texture.
