White Asparagus

Originally from the Mediterranean, its origin is placed near the Tigris and Euphrates rivers where Egyptians and Greeks already ate this vegetableHowever, it was in Roman times when its consumption became popular, because of its excellent organoleptic qualities as well as its therapeutic properties. These are also the reasons for its introduction into Spain. It is known by its scientific name "Asparagus officinalis” White asparagus grows underground; therefore it doesn’t receive direct sunlight and doesn’t develop chlorophyll which is the pigment responsible for the green colour in vegetables. This type of asparagus is highly regarded for its flavour and therapeutic properties.At an organoleptic level, they are thick and have a straight stalk, the colour of which is completely white. It possesses an intense bitter-sweet flavour, a profound aroma and a firm meaty texture.
